Made in the traditional Champagne-method—extra brut, bone-dry—then dealcoholized with the best German machines using vacuum distillation with patented aroma recapture that is cost prohibitively expensive to employ so only 3% of brands use it. The process preserves yeast complexity, toasted almond notes, and delicate bubbles.
